USAGE INSTRUCTION

  • A. Skin Maceration & Fermentation: 20-30 grams per ton of must. Apply during standard skin maceration fermentation.
  • B. Post-Thermovinification at 20°C: 20-30 grams per ton of must. Apply after thermovinification when temperature has dropped to approximately 20°C.
  • C. Post-Thermovinification at 50°C: 10-30 grams per ton of must. Apply after thermovinification when temperature has dropped to approximately 50°C.
Notes:
  1. Recommended dosages are generally based on application at 15°C. The effective temperature range is 15-63°C; within this range, activity increases with higher temperature.
  2. Contact time depends on the specific vinification process but should be no less than 1 hour. Longer contact times are beneficial.
  3. Activity is not affected by normal wine alcohol levels (<16% v/v) or legally permitted SO₂ levels.
  4. Bentonite inactivates pectinase. Do not add bentonite until the pectinase contact reaction is complete.

For optimal dispersion: Dissolve the pectinase in a small amount of pure water before application. Add to the tank and mix thoroughly.
